100ml organic white wine vinegar or classic white wine vinegar
50ml water
25g Billington’s golden granulated sugar
pinch Maldon sea salt
½ tsp black peppercorns
½ tsp yellow mustard seeds
1 bay leaf
40-50g fresh red chillies; birdseye, thai, pepperoncini, Serrano, Anaheim (dependent on your heat preference)
You will also need a small sterilised Kilner jar (approx 175ml - 250ml)
